Abstraksi
Diperoleh persamaan regresi y = 0,0203x + 0,1894.
Abstract (English)
Jams often use sodium benzoate as a preservative. The jam that is widely consumed by the community is strawberry jam. Based on PerKa BPOM RI No. 11 of 2019 the maximum permitted use of sodium benzoate as a preservative in jam is 200 mg/kg. Excessive use of sodium benzoate preservative will cause health problems, especially in the digestive and nervous systems. Based on this, it is necessary to conduct research to determine the levels of sodium benzoate in strawberry jam. This study aims to determine the results of the test for benzoic acid levels in samples of strawberry jam of various brands in the Pasar Besar area of Malang City in 2022 using the UV-Vis spectrophotometry method. The type of research used is descriptive verification using quantitative test method of UV-Vis Spectrophotometry. Jam as a sample was obtained from several shops in the Pasar Besar area of Malang City as many as 7 samples.
The absorbance of benzoic acid was measured at a wavelength of 240 nm. The regression equation y = 0.0203x + 0.1894 is obtained. From the results of the analysis, it was found that sodium benzoat contained in sample A (1.109 g/kg), sample B (2.158 g/kg), sample C (0.605 g/kg), sample D (0.550 g/kg), sample E (1.137 g/kg), sample F (1,275 g/kg), and sample G (2,232 g/kg). These results indicate that 5 of the 7 samples of strawberry jam did not meet the limit on the use of food additives as stated in the PerKa BPOM RI No. 11 of 2019 which states that the limit on the use of sodium benzoat as a preservative in jam is 200 mg/kg.
